Pumpkin Recipes Other Than Pumpkin Pie

pumpkin smoothieIf you love cooking fall recipes in your Lewisville apartment, but another pumpkin pie isn’t inspiring, we don’t blame you! Pumpkin pie is delicious, but there’s more to do with this fall fruit. Here is a roundup of some of our non-pie pumpkin favorites.

1. Pumpkin Polenta

  • 4 cups water
  • 1 cup pumpkin
  • 2 bay leaves
  • 1 cup polenta
  • 2 tbsp butter
  • 1/2 cup grated parmesan

Add water, pumpkin and bay leaves to a medium saucepan and bring to simmer. Whisk in polenta and simmer for 20 minutes, whisking occasionally, until smooth. Stir in butter and parmesan before serving.

2. Cucumber Pumpkin Dip

  • Half cucumber
  • 1 cup plain Greek yogurt
  • 1/2 cup pumpkin
  • 2 tbsp cilantro, chopped
  • 1 scallion, chopped
  • 3/4 tsp kosher salt
  • 1/4 tsp ground cumin
  • 1/4 tsp ground coriander

Peel and grate cucumber and press into a strainer to drain excess water. Add to a bowl with remaining ingredients and stir thoroughly. Serve chilled with pitas, tortilla chips, toasted baguettes, or any other foods with a crunch!

3. Pumpkin Pancakes

  • 1 cup milk
  • 1/2 cup pumpkin
  • 2 tbsp melted butter
  • 2 eggs
  • 1.5 cups flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1 tsp pumpkin pie spice
  • 1/4 tsp kosher salt

Whisk together milk, pumpkin, butter and eggs. Sift dry ingredients together, then whisk into milk mixture. Pour 1/4 cup of batter onto a hot, buttered skillet. Cook until bottom is golden brown, then flip. Drizzle with maple syrup and feel the fall spirit!

4. Pumpkin Smoothies

  • 1 cup vanilla yogurt
  • 1 cup pumpkin
  • 1 cup ice
  • 1 banana
  • 2 tbsp honey
  • 1/2 tsp pumpkin pie spice

Add all ingredients to a blender and blend on high until smooth. Makes two servings. Or, blend in 1/4 cup honey and churn in an ice cream maker for delicious frozen yogurt. Yum!

3 Holiday Treats to Make for Your Dog

DogYour family, friends and holiday party guests aren’t the only ones who appreciate great holiday treats. Your dog is sure to enjoy great holiday treats as well. Following are three great dog treat recipes for the holiday season that you won’t want to miss out on.

Homemade Dog Biscuits

Mix one cup of flour, 1/4 cup of wheat germ, 1/4 cup of brewer’s yeast and 1 tsp. of salt in a bowl. Pour 1 1/2 tbsp. of canola oil into another bowl and then alternate pouring in the flour mixture and 1/2 cup of canned chicken stock. Roll the dough out and use a dog bone cookie cutter to create biscuits. Place the biscuits on a tray and bake for about 10 minutes. This recipe makes about 5 dozen dog treats.

Apple Mint Christmas Cookies

Mix 1 1/2 cups of whole wheat flour, 1 cup all-purpose flour, 1/2 cup of oats, 1/3 cup of oat bran, 2 tablespoons powdered milk, 1 1/2 tsp. of dry baking yeast, 2 tbsp. chopped spearmint leaves, 7/8 cup of water and 1/2 cup of applesauce. You can also add 2 tsp. of food coloring if you wish. Once the mixing is done, roll the dough out, use a cookie cutter to create bone shapes and bake the cookies for about an hour. Allow the cookies to completely dry out before offering them to your dog.

Sweet Potato Treats

Preheat the oven to 350°F. Next, mix one cup of canned or freshly cooked sweet potato with 1 3/4 cups of whole wheat flour and one egg. Roll the dough into small balls, place on a cookie sheet and press the dough down slightly. Bake until golden brown and make sure they cool off completely before your dog gets ahold of them. This recipe makes about 2 dozen doggie treats.

A little crunch is added in the form of ginger cookies or graham crackers, and chopped nuts. Alternate the pumpkin cream cheese mix, with the cookie mix. Combine this with candied nut brittle and layer it in parfait cups.

Apple Crisp Cookie Cups

For those not into pumpkin, but still want to enjoy a fall-themed individualized treat, this recipe from Delish is a great option. It combines oatmeal cookie dough and diced Granny Smith apples to make mini “apple crisps” that guests are sure to love. The cookie cups are made with a standard muffin tin. The apple filling is cooked on the stove and spooned inside. Top with caramel sauce, whipped cream or vanilla ice cream.

Cranberry Swirl Cheesecake Bars
