- 4 cups water
- 1 cup pumpkin
- 2 bay leaves
- 1 cup polenta

Add water, pumpkin and bay leaves to a medium saucepan and bring to simmer. Whisk in polenta and simmer for 20 minutes, whisking occasionally, until smooth. Stir in butter and parmesan before serving.
2. Cucumber Pumpkin Dip
- Half cucumber
- 1 cup plain Greek yogurt
- 1/2 cup pumpkin
- 2 tbsp cilantro, chopped
- 1 scallion, chopped
- 3/4 tsp kosher salt
- 1/4 tsp ground cumin
- 1/4 tsp ground coriander
Peel and grate cucumber and press into a strainer to drain excess water. Add to a bowl with remaining ingredients and stir thoroughly. Serve chilled with pitas, tortilla chips, toasted baguettes, or any other foods with a crunch!
3. Pumpkin Pancakes
- 1 cup milk
- 1/2 cup pumpkin
- 2 tbsp melted butter
- 2 eggs
- 1.5 cups flour
- 2 tbsp sugar
- 2 tsp baking powder
- 1 tsp pumpkin pie spice
- 1/4 tsp kosher salt
Whisk together milk, pumpkin, butter and eggs. Sift dry ingredients together, then whisk into milk mixture. Pour 1/4 cup of batter onto a hot, buttered skillet. Cook until bottom is golden brown, then flip. Drizzle with maple syrup and feel the fall spirit!
4. Pumpkin Smoothies
- 1 cup vanilla yogurt
- 1 cup pumpkin
- 1 cup ice
- 1 banana
- 2 tbsp honey
- 1/2 tsp pumpkin pie spice
Add all ingredients to a blender and blend on high until smooth. Makes two servings. Or, blend in 1/4 cup honey and churn in an ice cream maker for delicious frozen yogurt. Yum!

Homemade Dog Biscuits
Mix one cup of flour, 1/4 cup of wheat germ, 1/4 cup of brewer’s yeast and 1 tsp. of salt in a bowl. Pour 1 1/2 tbsp. of canola oil into another bowl and then alternate pouring in the flour mixture and 1/2 cup of canned chicken stock. Roll the dough out and use a dog bone cookie cutter to create biscuits. Place the biscuits on a tray and bake for about 10 minutes. This recipe makes about 5 dozen dog treats.
Apple Mint Christmas Cookies
Mix 1 1/2 cups of whole wheat flour, 1 cup all-purpose flour, 1/2 cup of oats, 1/3 cup of oat bran, 2 tablespoons powdered milk, 1 1/2 tsp. of dry baking yeast, 2 tbsp. chopped spearmint leaves, 7/8 cup of water and 1/2 cup of applesauce. You can also add 2 tsp. of food coloring if you wish. Once the mixing is done, roll the dough out, use a cookie cutter to create bone shapes and bake the cookies for about an hour. Allow the cookies to completely dry out before offering them to your dog.
Sweet Potato Treats
Preheat the oven to 350°F. Next, mix one cup of canned or freshly cooked sweet potato with 1 3/4 cups of whole wheat flour and one egg. Roll the dough into small balls, place on a cookie sheet and press the dough down slightly. Bake until golden brown and make sure they cool off completely before your dog gets ahold of them. This recipe makes about 2 dozen doggie treats.
