Pumpkin Recipes Other Than Pumpkin Pie

pumpkin smoothieIf you love cooking fall recipes in your Lewisville apartment, but another pumpkin pie isn’t inspiring, we don’t blame you! Pumpkin pie is delicious, but there’s more to do with this fall fruit. Here is a roundup of some of our non-pie pumpkin favorites.

1. Pumpkin Polenta

  • 4 cups water
  • 1 cup pumpkin
  • 2 bay leaves
  • 1 cup polenta
  • 2 tbsp butter
  • 1/2 cup grated parmesan

Add water, pumpkin and bay leaves to a medium saucepan and bring to simmer. Whisk in polenta and simmer for 20 minutes, whisking occasionally, until smooth. Stir in butter and parmesan before serving.

2. Cucumber Pumpkin Dip

  • Half cucumber
  • 1 cup plain Greek yogurt
  • 1/2 cup pumpkin
  • 2 tbsp cilantro, chopped
  • 1 scallion, chopped
  • 3/4 tsp kosher salt
  • 1/4 tsp ground cumin
  • 1/4 tsp ground coriander

Peel and grate cucumber and press into a strainer to drain excess water. Add to a bowl with remaining ingredients and stir thoroughly. Serve chilled with pitas, tortilla chips, toasted baguettes, or any other foods with a crunch!

3. Pumpkin Pancakes

  • 1 cup milk
  • 1/2 cup pumpkin
  • 2 tbsp melted butter
  • 2 eggs
  • 1.5 cups flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1 tsp pumpkin pie spice
  • 1/4 tsp kosher salt

Whisk together milk, pumpkin, butter and eggs. Sift dry ingredients together, then whisk into milk mixture. Pour 1/4 cup of batter onto a hot, buttered skillet. Cook until bottom is golden brown, then flip. Drizzle with maple syrup and feel the fall spirit!

4. Pumpkin Smoothies

  • 1 cup vanilla yogurt
  • 1 cup pumpkin
  • 1 cup ice
  • 1 banana
  • 2 tbsp honey
  • 1/2 tsp pumpkin pie spice

Add all ingredients to a blender and blend on high until smooth. Makes two servings. Or, blend in 1/4 cup honey and churn in an ice cream maker for delicious frozen yogurt. Yum!

Rock Out to Rocktober Music Festival

concert audienceLess than three miles away from Lakes at Lewisville, the Rocktober Music Festival is on the way.  Get ready to rock during this concert series held every Tuesday night in October. Four excellent shows have been planned for this fall that you are sure to enjoy. Lewisville is full of fun things to do throughout the year, and this is one series not to miss!

Rock Out to Rocktober Music Festival

Starting off the series is Dallas-based band Hard Day’s Night, a Beatles tribute band that plays shows throughout the world. Started more than 20 years ago, this band has rocked for audiences in England and even got the chance to record some tunes at Abbey Road Studios. They play on October 10 from 6:30-8:30 p.m. in Wayne Ferguson Plaza, 150 West Church Street.

Second in the series is Rathmore Band, which plays Celtic rock, who will hit the stage October 17. They are a newly established band, quickly becoming popular for their contemporary style of Celtic music.

If you loved the Pretenders, then you will love The Intenders, a tribute band to the rock legends. They will be performing on Tuesday, October 24, and led by singer Molly Fine.  This should be a great night of Pretenders music played by this amazing tribute band.

Wrapping up this four-part series is a Halloween Bash. The final details are not yet solidified, but it is sure to be a Halloween bash to remember!

Bring a dog pack. Since you’ve already got your own pack full of water, snacks and clothing essentials, give your dog their very own pack to carry some of their essentials with them. Who to Watch at Sounds of Lewisville

concert guitarIn the town of Lewisville, the Sounds of Lewisville concert series has been a summer staple since 1991. The free summertime entertainment is a perfect option for the entire family. The concerts take place in the Wayne Ferguson Plaza, which is an urban park on Church Street and right across from Lewisville City Hall. The concerts are coordinated through the Community Relations & Tourism Department. They take place on Tuesday nights throughout the summer as a Lewisville tradition, starting at 7:00 p.m. and typically lasting two hours. Who to Watch at Sounds of Lewisville
